filling

2 tbspns oil

675g braising steak

2 tbspns wholemeal sr flour

300 ml brown ale

1/2 tspn dried thyme

grated rind 1 orange

225g small sweet pickled onions

salt and pepper

lOOg button mushrooms

pastry

225g wholemeal sr flour

5Og butter

5Og lard

3 tbspns cold water

milk or egg for glazing

cut steak into 25 mm cubes

heat oil in pan and quickly fry the meat until browned on all sides

sprinkle over the flour and cook for a minute then gradually stir in the ale and bring to the boil stirring all the time

add the thyme orange rind pickled onions and seasoning

cover and simmer gently for 1.5 hours or until the steak is tender adding the mushrooms for the last five minutes

turn into a 1.2 litre pie dish and leave to cool

to make the pastry tip the flour and a pinch of salt into a mixing bowl

rub in the fats until the mixture resembles fine breadbrumbs then bind with water to form a firm dough

place in a polythene bag and chill in the fridge for 30 minutes

roll out the pastry on a lightly floured surface so that that it is 5Omm larger that the pie dish

cut a strip about 25mm wide and press on to the dampened edge of the pie dish

brush the pastry rim with water and place the rolled out pastry on top

seal the pastry rim and knock up the edges with the back of a knife

use the pastry trimmings to decorate the pie

hrush all over the pastry witth beaten egg or milk and bake in a moderately hot oven 200C/400F/gas mark 6 for 10 mins then 1ower the heat to 180C/350F/4 gas mark and bake for a further 2030 mins until golden brown and crisp
