turkey and ham cutlets

1 small onion

1 1/2 oz butter

1 oz flour

1/4 pt turkey stock

1012 oz cooked ham and turkey

pepper salt mustard and a little nutmeg

pinch herbs

2 tablespoons cream or top of milk

egg and crumbs

Chop onion finely and cook gently in butter until transparent but not browned

Stir in flour and cook gently for a minute.

Gradually add stock and stir until boiling and very thick

Remove from heat

Stir in minced or finely chopped ham and turkey seasoning and herbs

Taste and if necessary add a dash of piquant sauce

Stir in cream

Spread on plate to cool

When cold and firm divide into 68 portions

Roll each into a ball with floured hands and shape to resemble a cutlet

Brush with beaten egg then coat with crumbs

Fry in deep fat at 380F until crisp and golden (about 1 1/2 minutes)
