rosemary and gorgonzola mash
1.4 kg old floury potatoes
salt and freshly ground black pepper
3 sprigs fresh rosemary
100ml warm milk
75g butter preferably unsalted
125g gorgonzola crumbled
fresh rosemary to garnish
Peel and roughly chop the potatoes bring to the boil in salted water with the rosemary then cover and cook in the simmering ovenfor 15 to 25 minutes or until very tender. Warm the milk in the simmering oven.
Drain the potatoes; discard the rosemary. Return potatoes to the pan and using a potato masher or ricer mash them over a gentle heat for 2 to 3 minutes.
Beat in warm milk and butter then season well with pepper.
Stir the gorgonzola into the potatoes; garnish with chopped fresh rosemary and sprigs.
Gorgonzola is a blue veined sharp flavoured italian cheese. If you prefer you could substitute milder Dolcelotte. Everyone loves mashed potatoes. They never need to be dull with all the many possibilities of herbs spices cheeses and other flavourings that can be added.
