fettucine with spicy seafood sauce
1 red onion
1 red pepper
1 red chilli
1 tbspolive oil
1 fat clove garlic
1/2 level tsp ground coriander
1/2 level tsp ground cumin
1level tbsp sun dried tomato paste
150ml red wine
2 x 400g cans chopped tomatoes
salt and freshly ground black pepper
350g cooked prawns
175g dried tagliatelle or 350g fresh fettucine
chopped fresh parsley to garnish
Slice the onion.
Deseed and finely chop the pepper and chills.
To make the sauce heat the oil in a large shallow saucepan.
Add the onion pepper chilli and crushed garlic
Cover and cook in the simmering ovenfor 20 minutes or until the onion begins to soften.
Add the spices and tomato paste and cook for 1 to 2 minutes.
Pour in the wine and bring to the boil then place on the floor of the roasting ovenfor approximately 5 minutes to reduce by half.
Add the tomatoes season and return to the roasting ovenuncovered for about 30 minutes or until the sauce is reduced and
thickened.
Add the prawns and heat through for 1 to 2 minutes only.
Season to taste.
Cook the pasta in an ovenproof pan of boiling salted water.
When the pasta has come to the boil transfer to the simmering ovenand cook until just tender.
Drain well.
Stir the sauce through the pasta to serve.
Garnish with chopped fresh parsley.
Another useful pasta dish where portions can be set aside for a vegetarian guests and prawns added to the spicy sauce for everyone else.
