glazed parsnips
455g parsnips
1 tablespoon seasoned flour
30g white fat or dripping
30g soft brown sugar
2 teaspoons white wine vinegar or tarragon vinegar
A pinch each of paprika and cinnamon
Set the oven at Gas Mark 6 400 degrees F 200 degrees C.
Peel trim and halve the parsnips.
Cook in boiling salted water until halfcooked.
Drain.
If the parsnips are very large halve them again.
Toss in seasoned flour.
Heat the white fat or dripping in a roasting tin then add the parsnips.
Baste well then bake for 20 to 25 minutes until almost tender.
Put all the remaining ingredients into a small pan and heat until the butter melts and the sugar dissolves.
Pour over the parsnips and cook for a further 10 to 15 minutes basting frequently.
Serve immediately.
Note: the parsnips are delicious served with roast poultry or a joint.
