225g selfraising flour
225g caster sugar
3 eggs
175g soft baking margarine
1/2 level teaspoons baking powder
fnely grated rind of 2 lemons
6 tablespoons milk
topping
175g granulated sugar
juice of 2 lemons
Line the small roasting tin with foil and grease well with extra margarine or butter.
Measure all of the cake ingredients into an electric mixer or bowl and beat well until smooth.
Turn the mixture into the lined tin.
