l00g white sugar
300m1 water
pared rind and juice of 1 lemon
a selection of fruits e.g. pineapple star fruit satsumas strawberries lychees kumquats
Choose a selection of fruits available in season.
Consider colours textures and size.
Have about 4 different fruits.
Place the sugar and water in a saucepan stand it on the simmering plate and stir while the sugar dissolves.
Add the lemon rind and juice and bring to the boil.
Remove from the heat and allow to cool. Pour into a serving dish.
Prepare the fruit according to type.
Toss in the syrup.
Chill and serve.
At the end of a chinese meal serve a selection of fruit or an exotic fruit salad. The chinese rarely eat puddings as we know them and you may find them too filling anyway. Serve almond biscuits or brandy snaps to go with it.
