vegetarian

1 x 450g jar of vegetarian suet free mincemeat

3 tablespoons brandy

4 eggs

300ml double cream

100g caster sugar

Mix the mincemeat and brandy together.

Separate the eggs.

Place the yolks in a small bowl and mix until well blended.

Whisk the cream until it forms soft peaks. Using an electric mixer whisk the egg whites on f list speed until stiff then gradually add the sugar a teaspoonful at a time.

You may need to scrape down the sides of the bowl from time to time.

Fold the egg yolks and cream into the meringue followed by the brandy and

mincemeat.

Turn the ice cream mixture into a 2 litre pudding basin cover and freeze overnight.

Delicious served with a warm toffee sauce (qv) or a brandy and raisin sauce (qv).

Not exactly an aga recipe but it cannot be left out ofthe book. If you can see flecks of butter or fat in the mincemeat heat until the fat has melted then cool before adding to the cream.
