12 brown sugar cubes

150g plain flour

1 1/2 level tsp) baking powder

1/4 level tsp) salt

1 egg beaten

40g sugar

50g melted butter

1/4 tsp vanilla essence

100ml milk

Roughly crush the sugar cubes and set aside.

Sift together the plain flour baking powder and salt.

In a large bowl combine the beaten egg sugar melted butter vanilla essence and milk.

Fold in the sifted flour and spoon the mixture into 7 to 8 muffin tins lined with paper cases.

Sprinkle with the brown sugar.

Bake at the front of the roasting ovenon the grid shelf on the floor for 15 to 20 minutes.

Cool on a wire rack.

Variations:

apple and cinammon:

Fold 5 level tbsp readymade chunky apple sauce and 1 level tsp ground cinnamon into the basic mixture with the flour and complete as above.

Maple syrup and pecan:

lightly toast 50g pecan nuts and roughly chop. Fold half of the nuts and 3 tbsp maple syrup into the basic mixture. Mix the remaining nuts with the crushed sugar and sprinkle over the muffins before baking. Drizzle with maple syrup to serve.

Freshly baked mums are marvellous for breakfast. Have the dry ingiedlents weighed up and ready the night before and you will have them in the ovenbefore the kettle has boiled for tea or coffee
