900g streaky park rashers
225g pigs liver
100g streaky bacon
450g minced lamb or veal
2 tbsp brandy
4 tbsp white wine
2 cloves garlic peeled
ground black pepper
4 juniper berries crushed
1 tsp salt
Coarsely mince the pork rashers liver and bacon.
Combine in a mixing bowl all the ingredients and stir well to mix.
Put the mixture into a 2 pint capacity terrine or loaf tin.
