This is a hot pepper sauce which should really be spelt and pronounced

piri piri. It comes from the mozambican name for the african birds eye chilli used to pep up and spice the bland flavour of so many staple african foods. It is now available in specialist food stores and large supermarkets and is an excellent store cupboard ingredient to enhance any dish that is not quite as exciting as you had hoped.
