Corned Beef & Cabbage

4 pounds corned beef

1/2 pound salt pork

3 quarts boiling water

1/4 cup sugar

3 bay leaves

2 garlic cloves

10 small red potatoes

4 small turnips, peeled

5 carrots, scraped

8 boiling onions, peeled

4 parsnips, scraped

1 head cabbage

Soak the corned beef in cold water 30 minutes.

In a large stock pot place the corned beef with the salt pork and

cover with the boiling water. Add sugar, bay leaves, and garlic, let

simmer for 3 hours. Remove the bay leaves.

Add potatoes, turnips, carrots, onions and parsnips. Continue cooking

for 30 minutes, more or less, until the vegetables are done.

Cut the cabbage into 6 wedges. Place the cabbage over the meat in the

soup pot for the last 15 minutes of cooking. Cover and simmer until

cabbage is done. Remove vegetables. Serve the corned beef & salt

pork with the vegetables on the side.
