Pumpkin Spice Roll
3/4 cup all-purpose flour
1 cup sugar
1 tsp baking soda
2 tsp pumpkin pie spice
1 cup pumpkin puree
3 eggs
1 tsp lemon juice
10x sugar to sprinkle
Heat oven to 375F. Grease & flour a 9×13 jelly roll pan (or cookie
sheet). Mix together dry ingredients, & stir in wet ingredients until
thoroughly blended. Pour into prepared jelly roll pan; spread evenly,
& bake for 15 minutes. Lay a damp *Linen* towel on the counter,
sprinkle it with 10x sugar, & remove cake onto the towel. Carefully
roll the towel up (lengthwise) with the cake in it, & cool for 20
minutes. (Place the cake-in-towel on a cooling rack).
Icing:
8 oz cream cheese, softened
1/4 cup butter
1 tsp vanilla
1 cup 10x sugar
Blend all icing ingredients in blender or with spoon until mixed &
creamy. When cake has cooled 20 minutes, unroll & spread icing onto
it. Immediately re-roll (Not in towel this time), & wrap with saran
wrap. Keep refrigerated or freeze up to 2 weeks in FOIL. Cut in
slices just before serving. It has a pinwheel look. This will be a
hit! 🙂
