250ml milk

250ml double cream

225ml clear honey

6 egg yolks

Bring the milk cream and honey to the boil in a heavy saucepan stirring well to incorporate the honey.

Whisk the egg yolks gendy in a bowl and pour the honey mixture over them stirring vigorously.

Return to the heat and cook slowly stirring continuously with a wooden spoon until the mixture will coat the back of the spoon.

Pass through a fine sieve and leave until completely cold.

When cold turn in an ice cream machine.
