lentils with wheat pasta

220g split yellow lentils (toor dal) washed and drained

1 teaspoon chilli powder

1 teaspoon turmeric powder

1 teaspoon cumin powder

1 teaspoon coriander powder

1 teaspoon sugar

1 teaspoon citric and

4 tablespoons sunflower OR 1 teaspoon black mustard seeds

1/2 teaspoon fenugreek seeds

10 curry leaves

salt

For the dough:

150g wholewheat flour

2 tablespoons sunflower oil

1 teaspoon turmaic powder

1 teaspoon chilli powder

2 tablespoons coriander leaves

Simmer the lentils in water until soft.

Stir in the powder spices salt sugar and citric add.

Heat the oil in a small pan and add the mustard seeds.

When they pop add the fenugreek and curry leaves.

Fry for a minute and pour over the dal.

Make the dough by kneading all the ingredients with some water.

Roll out thinly and cut into diamond shapes with a sharp knife.

Set the lentils to boil and add the dough shapes one at a time.

Simmer for 10 minutes.

Serve hot gamished with coriander leaves.

Eaten with rice it comes from one of the best restaurants in Gujarat.
