300g calfs liver

4 tablespoons olive oil

100g streaky bacon finely diced

2 onions chopped

2 teaspoons flour

300ml stock

2 tablespoons tomato puree

1/2 bay leaf

1 clove garlic finely chopped

salt pepper

2 teaspoon dried oregano

1 tablespoon chopped parsley

Cut the liver into pieces and puree in an electric blender or put through a mincer using the finest blade.

Heat the oil in a pan and fry the bacon and onions until golden.

Add the flour and cook for 2 minutes stirring.

Pour in the stock gradually stirring constantly.

Simmer for 5 minutes.

Add the tomato puree liver bay leaf and garlic.

Season with salt pepper and oregano.

Simmer for another 5 minutes then add the chopped parsley.

Serve with pasta or rice.
