marinated sirloin steak

750g sirloin steak

1 medium onion peeled and thinly sliced

1 garlic clove peeled and crushed

2 tablespoons olive oil

tablespoon tomato puree

1 tablespoon soy sauce

1 teaspoon yabasco sauce

1 tablespoon soft dark brown sugar

2 tablespoons concentrated orange juice


425g can tomatoes

100g mushrooms thinly sliced

15g butter

1 tablespoon chopped fresh parsley to garnish

Cut the steak into 4 portions and trim to remove any excess fat.

Put into a bowl with the onion garlic oil tomato puree sauces sugar orange juice and salt.

Stir the marinade well and turn the meat over and over to coat it thoroughly.

Leave the steak in the marinade for a few minutes or a few hours as convenient.

Turn the steak and marinade into a pan with the tomatoes taste and adjust the seasoning if necessary.

Bring to simmering point and simmer uncovered over moderate heat for 2025 minutes until the steak is tender and the sauce has thickened.

Fry the mushrooms in the butter and scatter them over the steak.

Garnish with the parsley.

This is a good hearty meat dish full of flavour.

Plain boiled potatoes and a green vegetable such as cabbage lightly simmered in chicken stock and

flavoured with sesame or caraway seeds make a good accompaniment.

When time is not quite so pressing you can use a cheaper cut of meat for a dish that is nearly as good.

Try using stewing steak or beef skirt and adusting the time accordingly: 11/22 hours after several hours of marinating.

This makes a super supper party dish.
