stuffed mackerel

4 mackerel (200g each)

juice 1 lemon

salt pepper cayenne garlic

powder

1 green pepper seeded

2 onions chopped

2 tomatoes skinned de seeded and chopped

1 tablespoon chopped parsley

1 teaspoon anchovy paste

4 bay leaves

150ml dry white wine

50g grated Parmesan cheese

Wash and clean the mackerel.

Pat dry.

Season inside and out with lemon juice salt and pepper.

Cut the green pepper into strips 5 mm and 1 cm long.

Mix with the onions tomatoes and parsley and season with cayenne garlic powder and anchovy paste.

Stuff the mackerel with this mixture adding a bay leaf to each fish.

Fasten the cut edges with cocktail sticks.

Butter an ovenproof dish and put the fish in it.

Pour over the wine and sprinkle with grated cheese.

Bake at 200
