merguez sausages with chimichurri sauce

2 tbsp flat parsley chopped

2 tbsp oregano chopped

2 tbsp coriander chopped

4 garlic cloves peeled and chopped

1 tsp cayenne pepper

1 tsp crushed (dried) chillies

4 tbsp white wine vinegar

4 tbsp olive oil

900g merguez sausages

Combine everything (apart from the sausages) and season to taste.

Allow to stand for at least an hour.

Cook the merguez on the barbecue for 15 to 20 minutes turning until done.

Serve hot with chimichurri.
