swedish herring eggs and beets with horseradish cream
3 rnedium beetroots with
fresh tops attached (young leaves only)
18 quails eggs
2 tsp clear honey
1 tbsp cider vinegar or lemon juice
4 tbsp creme fraiche
sea salt and pepper
5cm fresh horseradish root peeled and finely grated
3 matjes (swedish cured herrings) sliced
a few sprigs dill to serve
Cut off the beetroot leaves and rinse.
Clean the unpeeled roots and simmer in salted water until tender.
Simmer the quails eggs (1 minute for soft yolk 2 minutes for hard).
Peel.
Dissolve the honey in vinegar beat in creme fraiche and season.
Mix in about 1/2 tbsp of grated horseradish.
Arrange the beet leaves beets sliced herrings and eggs on plates dress with the horseradish cream and scatter with more
grated horseradish root dill and a little salt and pepper.
Serves 6
