vanilla yoghurt cream
250ml natural yoghurt
200ml double cream
pure vanilla extract about 1/2 tsp
50g caster sugar
Beat the cream until it stands in soft peaks.
Dont overwhip it; it should still fall softly from the spoon.
Mix in the yoghurt and very gently stir in the vanilla extract and the caster sugar.
Set aside in the fridge for half an hour or so before serving.
This cream is wonderful with Christmas pudding but it is also very good with fresh fruit and for serving alongside chocolate cake.
