75g plain white flour
75g freshly grated parmesan cheese
75g butter
1/2 tsp salt
1/2 tsp cayenne pepper
25g sundried tomatoes
25g pistachio nuts
25g pitted black olives
1 beaten egg to glaze
1 level tbsp poppy seeds caraway seeds or sesame seeds
In a food processor blend the flour cheese butter salt and cayenne pepper until the pastry forms a ball shape.
Knead lightly wrap in cling film and chill for about 10 minutes if it is too soft to roll out easily.
Meanwhile finely chop the tomatoes nuts and olives.
Roll out the pastry on a floured woricsurface until it is about 5mm thick.
Brash with beaten egg then sprinkle on an even layer of tomato nuts and olives.
Fold the pastry into a neat parcel shape to enclose the filing completely.
Roll out the parcel of pastry to a 10mm thickness.
Use a star cutter to stamp out shapes than place on baking sheets.
Brush lightly with beaten egg and sprinkle on poppy caraway or sesame seeds.
Chill the pastry shapes for about 20 minutes.
