6 Hard-Boiled Egg
1/4 C Mayonnaise
1/2 T Dijon Mustard
1 T Pesto Sauce
1 Tb Parmesan Cheese — grated
1/2 T Lemon Juice
Salt
Pepper
Parsley
Capers
Peel eggs and slice in halves. Remove yolks. In a small bowl, mash
yolks. Add mayonnaise and mustard, blending until smooth. Stir in
pesto, cheese and lemon juice. Season with salt and pepper. Spoon into
egg white shells and garnish with parsley and capers.

2 med tomatoes — sliced
1 med peeled cucumber — thinly sliced
1/2 med thinly sliced onion — separated into rings
1/2 c vegetable oil
1/4 c wine vinegar
1 tsp dried basil — crushed
1 tsp tarragon — crushed
1/8 tsp pepper
Layer tomatoes cucumber, and onion in shallow glass dish. Combine remaining
ingredients; pour over vegetables. Cover and refrigerate for 5 to 24 hours.
Serve as is or drain and arrange vegetables in lettuce lined bowl.

NOTES : This dish is especially attractive when one red and one yellow tomato
is used.
