honeyed pickled onions
for the brining
2.25kg pickling onionspeeled
225g cooking salt
2.5litres water
for the spiced vinegar
1.25 litres malt vinegar
10g pickling spice
150g honey
350g granulated sugar

Place the onions in a large bowl sprinkle with the salt and pour over the water.
Cover the bowl with a plate to keep the onions submerged and leave them to soak overnight.
Now make the spiced vinegar by placing the vinegar pickling spice honey and sugar together in a saucepan.
Bring this slowly up to the boil stirring to dissolve the honey and sugar and simmer for 5 minutes.
Then leave overnight.
Next day strain the onions dry them a little in a cloth pack them into cold clean jars and then strain the vinegar and pour it over the onions.
Seal and label the jars and store for 6 weeks before using.
Makes 4.5kg
