lamb white bean and rocket salad with cherry tomato and rosemary dressing
2 cups dried cannetlini beans soaked in cold water overnight
cherry tomato and rosemary dressing:
6 cherry tomatoes halved and seeded
2 cloves garlic
11/2 teaspoons fresh minced rosemary or 1/2teaspoon dried rosemary
1/2 teaspoon sugar
3 tablespoons sherry vinegar
1/2 cup olive oil
1/2 teaspoon ground pepper
1/2 teaspoon salt
1 pound cooked lamb cut into strips
6 cups rocket torn into bite sized pieces
fresh rosemary sprigs for garnish
Drain and cook beans in simmering water until tender about 45 minutes. Drain and let cool.
In a blender or food processor process all dressing ingredients until well blended.
In a large bowl combine lamb beans and rocket.
Toss with dressing and garnish with sprigs of rosemary.
