lime sorbet


500ml water

330g caster sugar

thinly pared zest and juice of 10 limes

Make a sugar syrup by combining the water and sugar in a saucepan bringing it to the boil and simmering it for fifteen minutes.

Tip all the lime zest into the syrup.

Bring to the boil then remove from the heat.

Leave the syrup to infuse as it cools.

Add the lime juice.

Strain the contents through a fine sieve.

Turn in an ice cream machine.

Make sure the limes are very shiny and green. I prefer the Kenyan ones.

Serves 4
