pasta salad

1 pound spaghetti broken into 4 inch lengths

2 cups fresh corn kernels (about 4 ears)

salsa dressing:

1 cup salsa verde

3 tablespoons olive oil

3 tablespoons fresh lime juice

pinch of sugar

2 small zucchini diced

4 plum tomatoes seeded and diced

1 red pepper roasted peeled and cut into strips

8 ounces smoked fully cooked spicy sausage thinly sliced

salt and freshly ground pepper to taste

1/2 cup fresh coriander leaves coarsely chopped

Cook spaghetti according to package directions.

Drain and let cool.

Cook corn in salted boiling water for 3 minutes.

Drain and let cool.

In a small bowl stir all dressing ingredients together.

In a large bowl combine spaghetti corn zucchini tomatoes bell pepper and sausage.

Toss with dressing.

Add salt and pepper.

Sprinkle with coriander.
