Old Fashioned Meat Loaf
2 tablespoons vegetable oil
1 large yellow onion, chopped
1 carrot, peeled and finely chopped
2 cloves garlic, minced
2 lbs. lean ground beef
1 1/2 cups fresh bread crumbs
2 eggs lightly beaten
1 teaspoon salt
1/2 teaspoon ground pepper
1/4 teaspoon dried thyme leaves, crumbled
/4 cup finely chopped fresh parsley
1 tablespoon Worcestershire sauce
2/3 cup tomato ketchup
1/2 cup tomato sauce, plus tomato sauce for serving, optional
Pre-heat oven to 350 degrees. Lightly oil a 9x5x3-inch loaf pan.
In a nonstick frying pan over medium heat, warm the vegetable oil.
Add the onion and carrot and saute, stirring occasionally until the
carrot begins to soften and the onion is almost translucent, about 4-5
minutes. Add the garlic and saute for 1 minute longer. Remove from
heat and set aside.
In a large bowl, combine the ground beef, bread crumbs and cooled
cooked onion & carrot. In another bowl, mix together the eggs, salt,
pepper, thyme, parsley, Worcestershire sauce and ketchup, mix well.
Pour the egg mixture over the beef. Using your hands, mix the
ingredients together, handling just enough to evently combine. Don
