White Chocolate Sauce

Makes 3 cups

2 cups heavy cream

8 ounces white chocolate chopped

1/2 teaspoon vanilla

Place heavy cream in a 2 quart saucepan. Heat over medium-high heat

until cream comes to a boil. Pour cream over chocolate. Cover and let stand

5 minutes. Whisk until smooth. Cool sauce in ice water bath for about 15

minutes. When cold stir in vanilla. Cover securely and refrigerate until

needed.

Microwave Peach Sauce for ice-cream

Serves 4 to 6

1/4 cup water

1/4 cup sugar

1 tablespoon lemon juice

1/2 teaspoon vanilla

3 peaches peeled pitted and sliced

In a 1 quart casserole combine the first four ingredients. Cook on high

for 2 to 4 minutes or until boiling rapidly. Stir in the peaches. Chill.

Microwave Peanut Butter Chocolate Sauce

2 squares semisweet chocolate chopped

1/3 cup heavy or whipping cream

3 tablespoons peanut butter

1 tablespoon light corn syrup

Combine chocolate and heavy cream in a microwave Safe bowl. Cook on

high 45 seconds. Whisk until smooth. Whisk in peanut butter and corn syrup.

Makes 2/3 cup.

Bittersweet Chocolate Sauce

3 tablespoons cocoa

1/2 cup water

1 cup chocolate chips

1 tablespoon butter

Combine all ingredients in a saucepan. Heat over low heat until

chocolate chips and butter melt.

Rich Butterscotch Sauce

Makes about 2 cups

1 cup light brown sugar

1 stick butter

1/2 cup heavy cream

Combine all of the ingredients in a heavy bottomed saucepan. Cook over

moderate heat stirring constantly about 5 minutes until sugar dissolves.

Remove from heat and whisk a little to blend thoroughly.________________________________________________________________________

Caramel Sauce

Makes 1 cup

1 cup sugar

1 cup boiling water

Put sugar in a heavy bottomed saucepan. Swirl the pan over very low

heat with out stirring. It will slowly melt and turn golden. When completely

melted stir in boiling water. Cook for 3 to 4 minutes more.
